Ingredients

1 big potato
1 cup cauliflower pieces
1/4 cup chopped green beans
1/4 cup frozen green peas
1/4 cup chopped carrots
1/2 cup paneer pieces(optional)
1 big onion - finely chopped
1 big tomato - finely chopped
4 tsp dry grated coconut
1 tsp sesame seeds
3-4 petals of garlic
1 inch ginger piece
1/4 cup chopped cilantro
1/2 tsp red chili powder
1 tsp kanda lasun chutney
pinch of asafoetida
1/4 tsp turmeric powder
2 bay leaves
3 tbsp oil
1/2 tsp mustard seeds
1/2 cumin seeds
salt to taste

Procedure
  • Dry roast grated coconut and sesame seeds. Make a  smooth paste of coconut, sesame seeds, garlic, ginger and cilantro by adding little water.
  • Heat oil in a pan. Add paneer pieces and shallow fry them till they get slight brown color. Take paneer aside. In the same oil, add mustard seeds, cumin seeds, pinch of asafoetida and bay leaves. Let them crackle. Add chopped onion and saute till onion becomes translucent. Add chopped tomato and saute for 3-4 minutes. Tomato should be mashed up with onion. Add all dry spices i.e. red chili powder, kanda lasun chutney (otherwise use mixture of cumin powder, coriander powder, and garam masala) and salt to taste. Saute till oil separates from spices. 
  • Add green beans, carrots and potatoes. Add little water and mix well. Let them cook for about 8-10 minutes. Now add ground masala, cauliflower and and paneer pieces. Let gravy cook for about 3-4 minutes. Finally add frozen green peas and chopped cilantro. Let the gravy simmer on low heat for 2-3 minutes. Serve hot with chapati or plain rice.
