To make 5-6 gul poli
Ingredients
For dough
1 cup wheat flour
1/2 cup all purpose flour
1 tbsp oil
3/4 cup milk
salt to taste
For stuffing
1/4 cup ghee/ butter
1/2 cup besan/ gram flour
3/4 cup grated jaggery
1/4 cup sesame seeds
1 tbsp dry grated coconut
1/2 tsp cardamom powder
1/4 tsp nutmeg powder
Procedure
- Mix wheat flour, all purpose flour and salt to taste. Heat 1 tbsp oil in a pan and add in to flour. Mix well and remove all lumps. Now start kneading the soft dough by adding little milk at a time. Consistency of dough should be soft like a regular chapati dough. Apply few drops of oil on dough and cover it. Let it rest for 30-40 minutes.
- To make the stuffing. Dry roast sesame seeds and coconut till they get slight brown color. Grind them coarsely and keep it aside. Melt the ghee/ butter in a pan on low heat. Add besan to it and stir the mixture till besan starts to change its color. Now, Take grated jaggery in a mixing bowl. Add ground sesame seeds and coconut, cardamom powder, nutmeg powder along with roasted besan. Mix all ingredients well and make equal sized balls.
- Make small equal sized balls from dough. Roll two balls like a small puri. Keep stuffing ball on one of puri. Spread stuffing little bit and place another puri on it. Seal the edges and dip into all purpose flour. Roll like a thick chapati. Roast from both the sides by applying ghee/ oil. Let it cool down before serving. Serve by applying some ghee on top.
