Ingredients


Cauliflower florets - 2 and half cups (Wash in warm water.)
Frozen green peas - 1/2 cup
Onion - 1 (finely chopped)
Tomato - 1/2 (finely chopped)
Ginger and garlic paste - 1 tsp
Curry leaves - 6-8
Oil - 2 tbsp
Cumin seeds - 1 tsp
Pinch of asafoetida
Red chili powder - 1 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Dry mango powder - 1/2 tsp
Garam masala - 1/4 tsp
Dried fenugreek leaves / Kassori methi - 1 tsp
Salt to taste
Cilantro for garnishing

Procedure


  • Heat oil in a pan. Add in cumin seeds, pinch of asafoetida and curry leaves. Let them splutter. Add chopped onion and saute till translucent.
  • Add tomato and saute for 2 minutes. Now, add in all dry spices mentioned above and saute till oil starts to separate from spices.
  • Add in cauliflower florets and little water (Another way: I cooked cauliflower florets in microwave just for 4 minutes and then added in the spices. To cook in microwave, Add florets, enough water and some salt in a bowl. Cook in microwave for 3-4 minutes till cauliflower is 70% done. Drain out the water, and use those cooked florets to make sabzi. This way, you can save the time and there is no need to add water while making sabzi.This will also help florets to retain their shape). 
  • Cover the pan and let it cook till cauliflower gets fully cooked. Finally, add frozen green peas and mix well. Switch off the heat and serve hot with roti or rice.
