Ingredients
Chicken - 500gm (Cut into medium sized pieces)
Onion - 1 (Sliced)
Tomato - 1 (cut into cubes)
Turmeric powder - 1/4 tsp
Oil- 3 tbsp
salt to taste
Cilantro for garnishing
To make Malabar chicken masala
Onion - 1 (sliced)
Fresh or frozen shredded coconut - 1/2 cup
Curry leaves - 15-20
Dried red chilies - 5-6
Cloves of garlic - 4
Ginger piece - 1 inch
Coriander seeds - 2 tbsp
Cumin seeds - 1 tbsp
Cinnamon stick - 1 inch
Black peppercorns - 5-6
Cloves - 3-4
Green cardamom - 3-4
Oil - 1 tbsp
Heat oil in a pan. Add curry leaves and sliced onion. Saute till onion gets slight brown color. Add garlic and cut ginger. Saute for few seconds and add red chilies, coriander seeds, cumin seeds, cinnamon stick, black peppercorns, green cardamom and cloves. Saute spices for a minute. Add coconut and saute till coconut turns slight brown in color. Switch off the heat and let the mixture cool down. Add in to blender and make a smooth paste by adding 1/4 cup of water. Keep this paste aside.
Procedure
- Heat 2 tsp oil in a pan. Add half of sliced onion and saute till it turns translucent. Add tomato cubes and saute for 3-4 minutes. Add turmeric powder and salt to taste. Now add chicken pieces and mix well. Add ground masala and 1 cup of hot water. Cover the pan and let it cook for 15-20 minutes. Stir in between. Add more water if required. Finally add chopped cilantro and let gravy simmer on low heat for 5 minutes.
- Heat 1 tsp oil in another pan. Add 5-6 curry leaves and half of sliced onion. Saute till onion gets nice brown color. Pour this mixture on top while serving this dish. Serve hot with chapati or rice.
