Ingredients
1 big eggplant
1 onion - finely chopped
3-4 curry leaves
3-4 cloves of garlic - finely chopped
1/2 tsp mustard seeds
1/2 tsp cumin seeds
pinch of asafoetida
1/4 tsp of turmeric powder
1/2 tsp of coriander powder
1/2 tsp of cumin powder
1 tsp red chili powder
1/2 tsp of garam masala
1/2 tsp tamarind paste concentrate
1/2 tsp grated jaggery
2 tsp oil
salt to taste
cilantro for garnishing
Procedure
- Make few vertical slits on eggplant with the help of knife and apply 2-3 drops of oil on it. Preheat the oven at 400 degrees F and roast eggplant for 40-45 mins. Keep turning sides of eggplant in between.
- After 40 mins take out eggplant from oven and let it cool down. Then peel off the skin and mash it really well.
- Heat up oil in pan. Add mustard seeds, cumin seeds, pinch of asafoetida, curry leaves and let them crackle. Then add chopped onion and saute till onion becomes translucent. Then add chopped garlic and saute for few seconds.
- Now, add coriander powder, red chilli powder, turmeric powder, garam masala and salt to taste. Saute for a minute.
- Add mashed eggplant, tamarind paste concentrate, grated jaggery and mix well with spices. Reduce the flame to low and cover the pan. Let it cook for 5-6 mins on low heat. Switch off the heat and garnish with some chopped onion and cilantro.
