Ingredients:

1 cup cooked rice/ leftover rice
3 green chilies
1 medium onion - finely chopped
1 small tomato - finely chopped
2-3 tsp of lemon juice
3-4 curry leaves
3 tsp of oil
half tsp of mustard seeds
1 tsp of cumin seeds
pinch of asafoetida
half tsp turmeric powder
half tsp of garam masala
salt to taste
cilantro for garnishing

Procedure:
  • Heat up oil in pan. Add mustard seeds, cumin seeds, curry leaves and let them crackle. Add chopped onion, green chilies and saute till onion becomes translucent. 
  • Then add pinch of asafoetida, turmeric powder and chopped tomato. Saute them for 2-3 minutes.
  • Add cooked rice to it and mix well. Add garam masala and salt to taste. Fry rice on medium heat for 4-5 mins. Finally add lemon juice and garnish with cilantro.
