Ingredients
Brinjal / Eggplant - 3-4
Onion - 1
Cloves of garlic - 5
Tamarind pulp - 2 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Curry leaves - 6-8
Pinch of asafoetida
Turmeric powder - 1/4 tsp
Oil - 2-3 tbsp
Salt to taste
Spices to dry roast and grind
Coriander seeds - 3 tbsp
Dry grated coconut - 2 tbsp
Sesame seeds - 1 tbsp
Dried red chilies - 5-6
Cumin seeds - 1 tsp
Black peppercorns - 1 tsp
Procedure
- Wash the brinjals and remove the stems. Slice them vertically and put the slices in water. Then slice the onion and garlic.
- Dry roast all above spices on low heat till nice aroma starts to come out. Let them cool down little bit. Add into blender and grind them coarsely. Keep it aside.
- Heat oil in a saucepan. Add mustard seeds, cumin seeds, sliced garlic, pinch of asafoetida and curry leaves. Let the splutter. Saute till raw smell of garlic goes away.
- Add sliced onion and saute till translucent.
- Add brinjal, ground spices powder, turmeric powder, tamarind pulp and salt to taste. Mix this up really well. Reduce the heat to medium and put the lid on. Let it cook for 8-10 minutes. Keep stirring in between. Add little water if required and cook till brinjal turns tender.
- Serve hot with roti or rice.
