To make 8 potli samosa

Ingredients

For Cover

All purpose flour - 1/2 cup
Semolina / rava - 2 tbsp
Oil - 4 tsp
Carom seeds / ajwain - 1/2 tsp
Spinach puree (Optional)
Salt to taste

For stuffing


Frozen green peas - 1 cup
Dry grated coconut - 1/4 cup
Onion - 1/2 (finely chopped)
Green chilies - 4 (finely chopped)
Ginger - 1 inch piece (finely chopped)
Cumin seeds - 1/2 tsp
Curry leaves - 6-8
Cumin powder - 1 tsp
Dry mango powder / amchoor powder - 1/2 tsp
Garam masala - 1/2 tsp
pinch of asafoetida
Turmeric powder - 1/4 tsp
Salt to taste

Procedure

Knead the dough

  • Take 1/4 cup of APF in a mixing bowl. Add in 1 tbsp of semolina, carom seeds and salt to taste. Pour 1 tsp hot oil in it and mix well. remove all the lumps. Now, start kneading the dough by adding little water at a time. Dough should be bit stiff. Cover with plastic wrap and let it rest for 20 minutes. In a similar way, make the green dough with remaining 1/4 cup of APF, 1 tbsp semolina and spinach puree. If you want to make some colorful potlis, you may use beet puree to make red colored dough.
Make the stuffing

  • Heat oil in a pan. Add cumin seeds, green chilies, pinch of asafoetida and curry leaves. Let them splutter. Add chopped onion and saute till translucent. Then add cumin powder, turmeric powder,  dry mango powder and garam masala. Saute for few seconds. Add green peas and salt to taste. Cook till peas turn soft. Finally, add coconut and sugar. Mix well and cook for a minute. Switch off the heat and let the stuffing cool down.

Make the potli and Fry

  • Make 8 equal sized balls from both the dough. Take one ball and roll it like a thin puri. Use your left hand and form the circle with your fingers. Place the rolled puri on it as shown in picture and depress it little bit. Place the filling in it and bring the edges together. With your right hand pinch at neck of potli to seal it. Make a knot using alternate colored dough and give a final touch by pressing clove at center. (This is optional, you can make potlis without knot too.)
  • Fry them nicely form all the sides till slight brown color. Transfer them to paper towel. Serve hot with tomato ketchup or any chutney. You might also like aloo samosa recipe. Click here to see the recipe - Aloo Samosa Recipe

  29. Absolutely amazing Potli's. Planning to make them day after tmrw for my sons Diwali party in school. Tell me is it possible to make and store them in fridge and fry them the next day. It wont be possible to roll and make before 7.15am

    1. Hi Arundhuti, I had stored regular samosas in refrigerator once in the afternoon and fried them later in evening. They were good. So give it a try, it should work.
