All purpose flour - 1 cup
Dates - 20
Sugar - 3/4 cup
Milk - 1/2 cup
Eggs - 2
Oil - 1/3 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Procedure
- Soak the dates in warm milk for about 15 minutes. Grind them in a blender to make smooth puree. Keep it aside.
- Preheat the oven at 350 degrees F and grease the cake pan. Sieve the dry ingredients i.e. APF, baking soda and baking powder.
- Beat eggs in a mixing bowl. Add in sugar and oil. Beat the mixture till sugar dissolves. Add dates puree and mix well. Start adding little flour at a time and keep mixing the batter.
- Pour the batter in a cake pan. Bake the cake for about 30 minutes. When the cake is out of oven, let it rest for 20 minutes. Then slice it and serve.
