Ingredients

250gm button mushroom - Wash and cut each into 4 pieces
1 onion - finely chopped
2 green chilies - finely chopped
3-4 petals of garlic - minced
1/2 tsp black pepper powder
1/2 tsp red chili powder
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala
1/2 tsp dry fenugreek leaves
pinch of asafoetida
1/4 tsp turmeric powder
1/2 tsp cumin seeds
3-4 curry leaves
1/4 tsp tamarind paste concentrate
3 tsp oil
cilantro for garnishing
salt to taste

Procedure

  • Heat oil in a pan. Add cumin seeds, green chilies, pinch of asafoetida and curry leaves. let them crackle. Add chopped onion. Saute till onion becomes translucent. Add minced garlic and saute for few seconds. Add turmeric powder, red chili powder, coriander powder, cumin powder and salt to taste. Saute till oil starts to separate.
  • Add mushroom pieces and mix well. Cover the pan and let it cook for 2-3 minutes. Don't add water as mushroom looses some amount of water. Now, add tamarind paste to 1 tsp of water and mix well. Add in this paste to mushroom. Cook till all moisture evaporates. Finally add garam masala, black pepper powder and dry fenugreek leaves. Let it simmer on low heat for 2-3 minutes. Garnish with cilantro and serve hot with roti.
