Ingredients:
500 gm chicken - cut into medium pieces
2 medium onions - finely chopped
1 big tomato - finely chopped
2 tsp dry grated coconut
1 tsp of sesame seeds
half cup of fresh cilantro
5-6 petals of garlic
1 tsp of chopped ginger
1 tsp of garam masala
1 tsp of coriander powder
1 tsp of red chili powder
1 tsp of paprika
half tsp of turmeric powder
pinch of asafoetida
1 tsp of mustard seeds
1 tsp of cumin seeds
2 bay leaves
5 tsp of oil
3 cups of hot water
salt to taste
Procedure:
- Dry roast grated coconut along with sesame seeds till they get nice light brown color. Then make a smooth puree of roasted coconut, sesame seeds, fresh cilantro, ginger and garlic in blender. Add little water to make fine puree. Keep it aside.
- Heat up oil in pan. Add mustard seeds, cumin seeds, bay leaves and let them crackle. Then add finely chopped onion to it. Add salt to taste. Adding salt at this point helps onions to cook faster. Saute onions till it get nice light brown color. Then add chopped tomato and cover the pan. Let it cook for 5-7 mins. Keep stirring in between. We want tomatoes to be mashed up with onions.
- Then add dry spices to it. Add pinch of asafoetida, turmeric powder, red chili powder, paprika, coriander powder and garam masala. Saute them till oil starts to loose out from spices.
- Add chicken pieces to it and mix well. Add hot water and cover the pan. Let chicken cook on medium heat for about 10 mins.
- Add puree which we made before into chicken and mix well. Let chicken cook again for 5-6 mins.
- Switch off the heat and garnish with cilantro.
