Ingredients:

1 cup of Basmati rice - Wash and soak into water for 15-20 mins
250 gm chicken - cut into medium pieces
4 tbsp of yogurt
1 tsp of red chili powder
half tsp of paprika
1 tsp of coriander powder
1 tsp of garam masala
2 tsp of lemon juice
half tsp of ground black pepper
half tsp of turmeric powder
2-3 tsp of ghee
2 green cardamon
1 tsp of cumin seeds
half cup of chopped cilantro
fried onions - 1 cup
salt to taste

Procedure:
  • Take yogurt in mixing bowl. Add red chili powder, paprika, turmeric powder, coriander powder, garam masala, ground black pepper, lime juice, ghee, cilantro and salt to taste. Add less amount of salt at this point as we are going to add salt in rice also. Marinate the chicken pieces in this mixture for about half hour.
  • Boil the water in vessel. Add green cardamon, cumin seeds and salt to taste. Then add soaked rice in it. Cook the rice till it is 70% done. It will take around 4-5 mins.
  • Heat up 1 tsp of oil in heavy bottom vessel and transfer the marinated chicken to it. Cover it up and let it cook for 5 mins.  Strain out excess water from boiled rice and add rice layer on the top of chicken. Add fried onions and chopped cilantro on top. Pour some ghee on it. Reduce the flame to low and cover the vessel tightly. If lid is not tight, you can also make use of dough to tight it up. Let biryani simmer on low heat for 20-25 mins. Serve hot with raita.

  1. Hi Poonam: Your recipes are really good. I make Biryani differently. I cook the rice and chicken/mutton separately. Then layer alternately, add saffron-milk on each layer of rice and give "dum". Try it.
